Stack of healthy pancakes for a healthy breakfast

Pancakes are a breakfast favorite, but traditional recipes can be high in refined flour and sugar. With a few simple swaps, you can create a nutritious and delicious pancake recipe that’s packed with fiber, protein, and essential nutrients to fuel your day. These healthy pancakes are easy to make, naturally sweetened, and perfect for a balanced breakfast.

Ingredients:

  • 1 cup rolled oats (blended into flour)

  • 1 ripe banana

  • 1/2 cup Greek yogurt (or unsweetened applesauce for a dairy-free option)

  • 1/2 cup milk of choice (almond, oat, or regular)

  • 1 egg (or flax egg for a vegan alternative)

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • 1 teaspoon honey or maple syrup (optional)

  • Coconut oil or butter for cooking

Instructions:

  • Prepare the batter: Blend the rolled oats in a blender until they become a fine flour. Add the banana, Greek yogurt, milk, egg, baking powder, cinnamon, vanilla extract, salt, and sweetener if using. Blend until smooth.

  • Heat the pan: Place a non-stick skillet over medium heat and lightly grease with coconut oil or butter.

  • Cook the pancakes: Pour small amounts of batter onto the skillet to form pancakes. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

  • Serve and enjoy: Stack the pancakes and serve with fresh fruit, a drizzle of honey or maple syrup, and a sprinkle of nuts or seeds for added texture and nutrition.

Health Benefits:

  • Oats provide fiber and help keep you full longer.

  • Bananas add natural sweetness and potassium.

  • Greek yogurt offers protein and probiotics for gut health.

  • Eggs (or flax eggs) provide protein and healthy fats.

Enjoy these wholesome pancakes as a nutritious start to your day!
